If you’ve been following me on my InstaStories, then you’ve probably noticed that I’ve been making my way through 30 days of the Whole 30 Challenge. If you have no idea was I’m talking about, you can reading all about the Whole 30 on their site that I’ll link below. It can be challenging trying to figure out what to eat more nights. So as I trying to figure out what to make the other, I thought, what about pork schnitzel.
The Whole 30 Program
It’s almost October and Octoberfest is almost here, so pork schnitzel seems to be the perfect dish for the season. I’m not going to lie, it doesn’t really taste like the real deal but it was still a hit with my family and it’s not an expensive dish either. So a ‘Yay’ on many fronts.

Ingredients
- 5 pork cutlets, thin
- 1/4 cup coconut flour
- 2 eggs
- 1 tbsp Italian seasoning
- 1 tbsp garlic powder
- salt
- pepper
- 2 tbsp coconut oil
- 1 lemon, sliced
Instructions
- Combine the coconut flour, Italian seasoning, garlic powder, salt and pepper. Add salt and pepper amount to your liking.
- Beat your eggs in a separate bowl.
- Pat dry the pork cutlets.
- Heat the coconut oil in a frying pan.
- Drip the cutlet in the coconut mixture, then the eggs, then the flour again.
- Fry the floured cutlets in the coconut oil. Fry for 3-5 minutes a side.
- Place the fried cutlets on paper towel and pat them gently to remove excess oil.
- Serve the cutlets with slices of lemons and enjoy
