With the cool weather starting to make itself known, I figured it’s about time to start adding pumpkin spice to everything, right? Okay maybe not everything, but it’s a great addition to this Chex mix. It’s screams of fall flavours, and it’s sure to be a hit in your home.
I don’t know about your family, but in mine, Chex Mix usually appeared during most of the major holidays. Sometimes, my mom didn’t even make it from scratch, but she just purchased it at the grocery store and set it out on the table. It was something we snacked on when we decorated the Christmas tree, watched National Lampoon’s Christmas Vacation, and even while we opened gifts at midnight.
So whenever there’s an opportunity for me to relive those precious memories, I take it and since it’s fall time, I think it’s the perfect time to dish out some pumpkin spice chex mix.
The thing with Chex mix recipes is that if you don’t like a certain ingredient just swap it with something you do like. For example, not a fan of pretzels? Swap it out with more nuts. The possibilities are endless. Plus Chex mix in cute little baggies makes the perfect gift for an avid snacker. It’ll surely become one of their favourite snacks.
Pumpkin Spice Chex Mix
- Total Time: 5 hours
Ingredients
- 1/4 cup brown sugar
- 2 tbsp pumpkin pie spice
- 1/4 cup butter, melted
- 2 cups Cinnamon Chex cereal
- 2 cups Wheat Chex cereal
- 2 cups Honey Nut Cheerios
- 1 cup pretzels
- 1 1/2 cups mixed roasted nuts
- 1 tbsp vanilla extract
- pinch of salt
Instructions
- In a small sauce pot or microwaveable bowl melt the butter, about 1 minute on high.
- Once the butter is melted, stir in the brown sugar, pumpkin pie spice, and vanilla extract.
- In a slow cooker, add cereal, pretzels, and mixed roasted nuts.
- Evenly pour the butter/pumpkin pie spice mixture over the dry ingredients in the slow cooker. Stir the ingredients so it’s well combined. Be careful not to crush your cereal in the process.
- Cook on High for 2 hours, stirring every 20 minutes or so. The mixture will be on the tacky side
- Transfer the mixture to a large baking sheet, and let the mixture sit for 2 hours or overnight. It’ll dry out the mixture and make it crunchier.
- You can store the Chex Mix in an airtight container for 2 – 3 weeks.
Notes
If you don’t like a certain ingredient, feel free to replace it. This recipe is so easy to customize to your own tasting, so have fun with it.
