So the other day I was having dinner with a close friend of mine when she mentioned how difficult it is to find something she could eat since she has so many allergies, especially to gluten. So that got me thinking, how could I change up my apple crisp recipe so my friend could enjoy a piece of fall heaven this season. After some experimenting, this gluten-free apple crisp was born, and it was well worth the effort. I actually enjoyed it more than my regular Apple Crisp recipe.
For the topping, I used Love Grown new granola called Sweet Cranberry Pecan. It added a whole another level of flavour to this apple crisp, so I definitely recommend using it, otherwise, you could use another gluten-free granola. It’ll also work just as well.
One of the things I enjoy about this apple crisp is that it felt like I didn’t need to add in a whipped topping to it. It was delicious just the way it was. Plus if you don’t want to eat too much of it, separate the ingredients into freezable trays and freeze before you bake the apple crisp. Then the next time you feel the craving or having guests coming for dinner or a visit, pop one of these into the oven.
