Happy Spring Everyone!
I figured since springtime is here, I’d share some of the goodies I’m baking up in the kitchen this season. These springtime cupcakes are incredibly easy to bake and put together plus they are sure to impress all your friends and family.
You could bake the whole thing from scratch if you want, but if you’re in a hurry, or maybe you just don’t want to go through the trouble of baking a cake from scratch or whipping up icing from scratch, then don’t. Baking should be fun, not a chore, besides no one is going to judge you for using boxed cake and ready-made frosting, okay no one who matters is going to judge you. Screw anyone who judges you for making these yummy cupcakes. Anyways, sorry for the mini-rant, this whole judging moms thing is getting super old and tiresome, let’s just have fun and bake some fun and tasty treats for Easter.
So here’s what you’ll need to get started:
1 box cake mix
3 eggs
1/2 cup of vegetable oil
1 cup of milk
Cupcake baking trays
Cupcake liners
For the Frosting & Decorating:
3 cups of vanilla frosting
green food gel
piping bags
decorating frosting tips #233 (Grass Tip) or #129 (Drop Flower Tip)
shredded coconut, toasted
Mini Chocolate Eggs
So preheat oven to 350 degrees F and line your cupcake tray with cupcake liners.
In a mixer bowl, combine cake mix, eggs, oil, and water. Beat for 2 minutes. Once everything is mixed together, pour batter into your cupcake liners. Do not fill the cupcake liners to the top, spoon about 3 tbsp into each liner. or else they will overflow in your oven and make one HUGE mess. Bake for 12-17 mins.
Remove from oven and let cool completely.
For the frosting, scoop 3 cups of frosting from your store-bought frosting can into a medium bowl. Add green food coloring to the frosting and mix. I use Wilton Color Right Performance Color System, which I recommend over and over. The colors come out much richer compared to grocery store food coloring liquids. I’ve been using them for at least 2 years, and have no complaints. They are perfect for royal icing, buttercreams, macarons, everything. And I don’t find that they make the batter runny like other brands do. Anyways, get your piping bag and tip ready. Or if you have these plastic squeeze bottles get those ready. I use them whenever I run out of piping bags. Fill with frosting and frost your cupcakes. If you want to frost your cupcakes to make them look like green grass, I recommend using Wilton Frosting Tip #233 which is called Grass, otherwise, you could also use the Drop Flower Tip #129, both work and as you can see from the photos, both turned out super cute, so it’s really up to you. Also, the drop flower tip is much cheaper compared to the grass tip and can be used for more than just piping grass, so it might be the best option if you’re looking for something that you can use more often.
Next, sprinkle some toasted coconut in the shape of a nest and place three mini chocolate eggs in the center. If you can’t find toasted coconut, simply take regular shredded coconut, place it on a baking sheet and pop it in the oven for approximately 5 minutes at 450 degrees F. Keep checking on it, and if it’s still not brown enough keep it in for a little bit longer.
So there you have it, simple yet cute springtime cupcakes that are perfect for Easter! Your kids are going to love them, and let’s be honest so will the big kids in your life.
